The recipe for curry beef vermicelli soup

  1. Peel the tomatoes and cut them into small pieces. Cut onions into thin strips. Chop the curry into small pieces. Fans should be soaked in soft food in advance.
  1. Blanch the sliced beef in boiling water and remove for later use.
  1. Heat a wok over medium heat, add oil, and stir fry shredded scallions until fragrant. Add tomato chunks and stir fry until soft.
  1. Add minced curry, light soy sauce, sugar, and salt, add enough water, bring to a boil over high heat, then simmer over medium heat for 5 minutes.
  1. Add the beef fat and continue cooking for 5 minutes to let it taste. Add softened vermicelli, cook for 1 minute, then turn off the heat and garnish with chopped scallions.
