The method of rolling vegetable cakes
- Wash the green amaranth thoroughly and control the water level

- Noodles: According to the amount of food and noodles, the weather is hot. I use normal temperature water to mix the noodles. The noodles should be soft. I use chopsticks to stir them into pieces and then stay awake for 20 minutes. When there is more dough, I can roll them into Youbing (Deep-fried round and flat dough-cake) or single cakes.

- Cut the scallions into chopped scallions, set aside, and add them to the dish later to enhance the aroma.

- Cut the vegetables into small pieces after controlling the moisture, without cutting them too finely. This dish is easy to cook. Add chopped scallions, salt, oil, chicken essence and other seasonings. I didn’t add any other seasonings, so I think it’s simple and delicious 😄。

- Knead the dough smooth and divide it into small pieces. For vegetable cakes, the thickness of each piece should be thin, so the pieces should not be too large. I used 75g small pieces this time, and you can adjust the size of the pieces according to the size of the pot.

- The vegetable cake needs to be made in two pieces, so divide them into two pieces at a time, knead them smooth, press them flat, and start rolling out the pieces. When rolling out the cakes, sprinkle some flour to prevent them from sticking together. Push the dough forward with your right hand and roll it back with your left hand to flatten it out first. As you roll it out, the dough will rotate while rolling it out, making the dough very round. After rolling the dough one circle, flip it over and continue rolling it into a thin pancake while rolling it out. During the rolling process, you don’t need to push it to the end, just push it to the third corner of the pancake. The pancake will be rolled out in this circle, and you don’t have to worry about some parts being thick and some parts being thin, just like rolling dumpling wrappers.

- After rolling out the two pancakes, start spreading the vegetables evenly on top of them. The amount of vegetables should be according to personal preferences. I add more to make it more enjoyable to eat, but don’t put too much as it’s not easy to cook.

- After the filling is spread out, cover another cake, align the edges, and squeeze the edges tightly.

- Because there is no vegetable filling on the side, some children don’t like eating while eating. They can use a bowl to press off the side, so that the whole cake has vegetables. The pressed side can be used to roll into a single cake or Youbing (Deep-fried round and flat dough-cake).

- The pot is hot, and I use a flat bottomed pot. I can use an electric pancake pan or a stove pan. My pot has a total of 9 levels, and I use a medium to high end (between 6-7). The pot should not be too hot, as if it is too hot, the color on the cake will be affected and the inside will not be fully cooked. I can use a medium level.

- Start making pancakes, let the pancake sit for about a minute, turn it over as soon as the bottom starts to show color, about 3-4 minutes, and then turn it over when the other side is cooked.

- Once the color is ready, this side is almost cooked. Flip it over and bake the other side. If both sides have the same color, the cake will be cooked!

- The first cake comes out of the pot, isn’t the color pretty good? 😄 Continue with the second, third

- It’s okay if there’s a little leftover green amaranth filling, but it’s a pity to bake half of it. Just fold a single cake and bake a vegetable cake.

- Finally, two more leek, fungus, egg and vegetable cakes were added. The cakes can be filled with various fillings, such as amaranth filling, leek filling, and hanging melon filling. You can choose different dishes according to your preferences.

- This type of melon is also very delicious. You have to choose a very tender one, and add some chives to season it. It’s also very fragrant!
