Recipe for Green Pepper Rabbit

  1. Be sure to choose this slender green pepper with two thorns to have a satisfying spiciness, the darker the color, the spicier it is.
  1. Wash and cut the green pepper of Erjingtiao into 2cm long sections.
  1. Cut the rabbit meat into thumb sized diced pieces, cut the pickled peppers into small sections, and slice the pickled ginger.
  1. Add oil to the pot, add a little more. When it’s 50% hot, pour in diced rabbit and stir fry over medium heat until the water is dry (when the oil changes from cloudy to clear).
  1. Add Douban, cooking wine, pickled peppers and ginger, garlic, dried Sichuan peppercorns, and slowly stir fry over low heat.
  1. Stir fry until the diced rabbit is slightly dry and fragrant. Add two thorns and green peppers, a little white sugar, soy sauce, and salt, and continue to stir fry over low heat. When the green peppers are cooked, add monosodium glutamate, stir fry well and serve on a plate.
