Recipe for Green Pepper Rabbit
- Be sure to choose this slender green pepper with two thorns to have a satisfying spiciness, the darker the color, the spicier it is.

- Wash and cut the green pepper of Erjingtiao into 2cm long sections.

- Cut the rabbit meat into thumb sized diced pieces, cut the pickled peppers into small sections, and slice the pickled ginger.

- Add oil to the pot, add a little more. When it’s 50% hot, pour in diced rabbit and stir fry over medium heat until the water is dry (when the oil changes from cloudy to clear).
- Add Douban, cooking wine, pickled peppers and ginger, garlic, dried Sichuan peppercorns, and slowly stir fry over low heat.
- Stir fry until the diced rabbit is slightly dry and fragrant. Add two thorns and green peppers, a little white sugar, soy sauce, and salt, and continue to stir fry over low heat. When the green peppers are cooked, add monosodium glutamate, stir fry well and serve on a plate.
