The recipe for stewing chicken in a clay pot with white scallops and mushrooms
- Soak Bai Bei in salt, water, and sand, then scrub thoroughly. Wash and chop the chicken, drain the water, add 1 tablespoon of salt, 1 tablespoon of cooking wine, 1 tablespoon of starch, and marinate for 10 minutes. (marinated with starch, stewed to make the chicken tender and smooth, according to personal preference)

- Soak the shiitake mushrooms in advance, slice the ginger and garlic without patting, use small ones, and cut the scallions into sections for later use.

- Heat up the oil and add ginger slices and garlic until fragrant.

- Add chicken and stir fry mushrooms for a while.

- Add a bowl of water, bring to a boil, add oyster sauce and soy sauce, and simmer over medium heat for 10 minutes.

- Put in the white scallops, cover and simmer over high heat for 5 minutes. When the white scallops are fully cooked, sprinkle with chopped green onions and serve.
