The recipe for stewing chicken in a clay pot with white scallops and mushrooms

  1. Soak Bai Bei in salt, water, and sand, then scrub thoroughly. Wash and chop the chicken, drain the water, add 1 tablespoon of salt, 1 tablespoon of cooking wine, 1 tablespoon of starch, and marinate for 10 minutes. (marinated with starch, stewed to make the chicken tender and smooth, according to personal preference)
  1. Soak the shiitake mushrooms in advance, slice the ginger and garlic without patting, use small ones, and cut the scallions into sections for later use.
  1. Heat up the oil and add ginger slices and garlic until fragrant.
  1. Add chicken and stir fry mushrooms for a while.
  1. Add a bowl of water, bring to a boil, add oyster sauce and soy sauce, and simmer over medium heat for 10 minutes.
  1. Put in the white scallops, cover and simmer over high heat for 5 minutes. When the white scallops are fully cooked, sprinkle with chopped green onions and serve.
