Method for making cold mixed chicken breast shredded meat
- Put chicken breast in cold water, add ginger slices, star anise, scallions, and a spoonful of cooking wine to remove the fishy smell. (My chicken breast is small in size, so it’s cooked by cutting it open in the middle. Thick chicken breast is best cooked by cutting it open on the side.)

- Boil the water for two minutes, remove, let cool, shred and set aside. (Rub open the thickest part of the meat with chopsticks, and cook for another minute before it’s cooked)
