How to make simulated pumpkin pie
- Peel and deseed the pumpkin, then wash it and cut it into chunks. Put the pieces in a microwave-safe bowl, cover it with plastic wrap, and microwave on high for 7 minutes until the pumpkin is completely soft. The pumpkin will release some water after heating—drain it to make it easier to form the dough later.
- Pour sugar into the pumpkin and mash it into a paste. Add glutinous rice flour and corn starch. First stir it into a dough with a spatula, then knead it evenly with your hands.
- Divide the red bean filling into 5g pieces and knead them into balls; divide the pumpkin dough into 27g pieces and knead them into balls. Wrap the red bean filling in the pumpkin dough, knead it until smooth, and cover it with plastic wrap for later use.
- Take a dough and use a toothpick to press out three horizontal lines on the top. Then use another toothpick and press out lines on the sides with two toothpicks facing each other. Insert a wolfberry in the center of the top as a pumpkin stem.
- Put it into the steamer, brush oil on the steamer to prevent sticking, and continue steaming for 8 minutes after the water boils.
