How to cook eggplant with beans
- Cut beans and eggplant into long strips for later use (forgot to take a photo)
- Pour two spoons of salt into the eggplant and mix well. Marinate for 5 minutes. Rinse with clean water and squeeze out the water for later use (this step is to save oil, eggplant does not absorb oil).
- Mix all the ingredients including sugar, water, starch, light soy sauce, dark soy sauce and oyster sauce.
- Heat the pan, pour in cooking oil, then pour in beans, fry the beans until cooked and set aside
- Add a little oil and continue to fry the eggplant until cooked.
