The recipe for cocoa chocolate bagels
- Dissolve 3 grams of yeast in 140 grams of water, and add 215 grams of high gluten flour, 10 grams of cocoa powder, and 10 grams of granulated sugar to the chef’s machine and dough (all ingredients except butter and salt)

- Add 3 grams of salt and 10 grams of room temperature softened butter to the dough and continue kneading until fully expanded (no film is allowed)

- Knead the dough evenly, weigh it and divide it into 5 equal parts. Let it stand for half an hour. My dough weighs 390 grams and is divided into 78 grams each. If time is not enough, you can proceed to the next step without letting it stand. Beiguo is already a low fermentation bread

- Take a dough and roll it out

- Flip it over and roll it out again, press one side thin, and lay the heat-resistant chocolate beans flat at 1/4 of the other side

- Roll up from right to left

- After tightening the mouth, roll out one end and press it thin

- Form a circular ring, pinch tightly and place the oiled paper downwards (the oiled paper is used for easy access when boiling sugar water)

- Perform the same operation on the remaining dough, cover it with oil paper, and let it ferment at 32 ℃ for half an hour in a damp environment

- After fermentation, it is 1.5-2 times larger

- Boil 60 grams of sugar and 1 liter of water until small bubbles form. Add bagels and quickly remove the oil paper. Cook for 30 seconds (20 seconds or 40 seconds are fine)

- Quickly flip over and cook for another 30 seconds (the picture shows the back of the bagel after flipping)

- After draining the water, put it back into the baking tray and bake at 200 ℃ for 20 minutes in the preheated middle and lower layers of the oven (because cocoa itself has color, I didn’t pay attention to whether it was colored or not, so I took it out after 20 minutes)

- After letting it cool, cut it open and make sure to cool it to room temperature
