Lao Gan Ma’s cold noodles are absolutely amazing! Method without scallions and garlic

  1. Boil water. After the water boils, add the noodles and cook them over high heat. Stir the noodles occasionally to avoid sticking to the bottom. Cook the handmade noodles until there are no white cores left, and simmer over high heat for about 8 minutes.
  1. After cooking the noodles, take them out and rinse twice with ice water, or soak them directly in ice water for later use.
  1. Mix the sauce while cooking the noodles, using a slightly larger spoon. 2 tablespoons of Lao Gan Ma, 1 tablespoon of soy sauce, 1 tablespoon of vinegar, half a tablespoon of sesame oil, half a tablespoon of oyster sauce, and a pinch of white sugar.
  1. Cut cucumber into shreds and cilantro into small pieces. Add shredded cucumber, cilantro, and peanuts to the noodles, drizzle with sauce, and stir well. It’s done in fifteen minutes.
