Recipe for Smooth Egg Shrimp

  1. The required ingredients are very simple, just eggs and shrimp. Green beans can be omitted, and scallions are the last to be sprinkled on the surface for decoration, which can also be omitted. The only thing is that the quality of the eggs should be good, because smooth eggs are not scrambled eggs and are not fully cooked. They are very tender. To be safe, it is still necessary to choose raw eggs that can be eaten, such as yellow swan eggs.
  1. After removing the shrimp line, mix the shrimp with cooking wine, salt, cornstarch, and oil, and marinate it slightly.
  1. Beat the eggs evenly, and fully disperse them until they are foam. Sprinkle a little salt.
  1. Boil a small amount of water, blanch the green beans for about 1 minute, and then remove them.
  1. Continue using the same pot of water, add the shrimp and blanch until they change color, then remove. Shrimp can also be fried in oil, but because I wanted to boil green beans in water, I casually boiled the shrimp as well. It’s okay, this step is just to heat the shrimp, because the process of sliding the eggs later is too fast and not enough to fry the raw shrimp, so cook the shrimp in advance.
  1. After draining the green beans and shrimp, add the egg mixture.
  1. Start skating eggs. First, heat up the pot, pour in oil, and shake the smooth pot. Oil suggestion is to stir fry slightly more than usual. After heating the oil, turn off the heat. Turn off the heat before pouring in the egg mixture.
  1. Using residual heat to smooth eggs while turning off the heat. Slippery eggs are not scrambled eggs, don’t stir fry them, but constantly push the egg mixture into the middle. Until all the egg mixture stops flowing. If your pot is hot enough, you can stop firing throughout the entire process. If your pot cools down quickly and the egg mixture no longer has a tendency to solidify, then turn on low heat and heat it up slightly.
  1. Keep the eggs very smooth and tender, remove from the pot, sprinkle some scallions for decoration. The taste of the eggs that slide out like this is very different from that of scrambled eggs, especially delicious.
